I read other reviews before buying this product, good and bad. I used this mold for the first time today, hoping that it would not be as difficult as some had described. I have been making sushi at home for over a year using the traditional bamboo mat, which I find very fast and easy now that I am used to it. I bought this mold to give some fun new shapes and sizes to our sushi dinners. I did not use the round roll since I prefer the bamboo mat but I did try all of the other shapes. They were very simple to make and fun to see the variety they provided. The large amount of pieces that accompany this mold are fantastic, making so many shapes and sizes was a real treat!

Bought a Sushi Bazooka and after giving it two separate tries threw it in the trash. Te problem was in the hinge - it likes to fly open. Sushi Bazooka pops apart when you try to pack it tight enough - the Sushi Master can't pop apart.

The physics of this one makes it work - no hinges to fail and fall away. Also the cutting slits are a good idea. They keep the roll in-shape as you slice. The secret to sushi rolls is in the compression, and proper rice cooking. Take any container, fill it with dry rice, then use that same container with 1 1/2 parts water to cook it. Most recommend using a rice cooker - they're cheap and always get it right. Don't overdo it with the vinegar. Mushy rice falls apart, no matter what method you use.

Flip any top piece over there is a trough maker for making a nice, even depression for the fillings. The online videos all miss that feature.

Also, the online videos I saw tell you to moisten and close the nori BEFORE compressing. I found it better to keep the nori open, compress, then moisten and seal the nori over the compressed rice - then re-compress a bit.

Start with the small square mold. It's the easiest to get right the first time. There is no molding to stop downward compression. Also, next time I'm going to use half sheets of nori with the small press. With the larger molds, getting the right amount of rice is key. Too little rice and you won't get the necessary compression.

Just looking at the pictures of the Sushi Master, I could see they had remedied the exploding Bazooka's main shortcoming. In my opinion, any negative reviews here must be based on operator error, and/or poorly prepared rice.

This maker is used only for nori on the outside. The instructions are easy to follow, and you can make many rolls very quickly. You cannot put too much filling on the inside, but it is a very risk free way to make sushi. I thought I would use this more, but my friend enjoyed using it a lot more than me. This does make nori rolls on the outside a lot faster! However, I do prefer a bamboo mat, because I like rolls with rice on the outside.

I just received the product today and was mildly disappointed. The package was new and sealed but there was no instruction booklet. Googling hasn't produced one yet either. Also the product title says that a knife is included with the kit. I didn't receive a knife but when I came back and read the full product description, I saw no mention of a knife. So the title should be updated to omit the mention of the knife as it is a bit misleading.

For those two reasons I'm giving the product a 3 rating which some may think is unfair but instructions are KEY for using a product that is new to you and the inclusion of the knife was one of the reasons that I was ordering from this vendor.

As for making sushi, my husband and I got a lumpy but satisfying roll done and are looking forward to making more. We found a recipe for sushi rice online and used julienned veggies for the filling. We winged it because we had no instructions but my husband loves to cook and he kinda sorta figured out how to use the pieces.

i do not see a way on amazon to edit my order. i emailed them but i don't think they understood what i asked them to do.

This kit is a waste of time. It takes longer to read the instructions than it idoes to make sushi itself. When I bought this I was a home sushi newcomer, I had no idea how to make sushi so I bought this gimmick and a simple bamboo sushi mat for three bucks. I got them on the same day so I unpacked this item and read the instruction manual and thought , which piece A goes into what piece B? Then I pulled out the bamboo mat and boom! I was making pretty good rolls in just a few minutes. Who would thought it was that easy. So go buy yourself a bamboo mat, wrap it in plastic wrap and live happily ever after.
